  • 1 Serrano Pepper ($0.13)

  • 2 15.5oz Cans Kidney Beans ($1.72)

  • 1 14.5oz Can Diced Tomatoes ($0.82)

  • 2 tsp Salt

  • 2 tsp Pepper

  • 4 tsp Chili Powder

  • 2 tsp Cumin

  • 2 tsp Garlic Powder

If you don't have a crockpot, that's ok! This recipe can be made in a stock pot on the stove; however, you won't have the convenience of setting and forgetting like with the crockpot.

Preparation


Prep Time: About 15 Minutes


Ingredients: Ground turkey meat, red pepper, 1 red onion, diced tomatoes, 2 cups water, salt, pepper, chili powder, cumin, and garlic powder.


  • Heat large pan on stove over medium heat

  • Once hot, add ground turkey meat

  • Add 1 tsp salt and 1 tsp pepper to ground meat as it browns; stir often

  • Turn crockpot on desired cook time; I like to choose 6-hours

  • As turkey meat is cooking, prepare veggies for the crockpot

  • Dice and seed red pepper and peel and dice 1 red onion (save the other onion for the toppings)

  • Open can of diced tomatoes and add to crockpot; juice and all

  • Add rest of dry spices to the crockpot

  • Mix spices around the tomatoes, red pepper, and red onion

  • Once turkey meat is browned and has an internal temperature of at least 165-degrees Fahrenheit, drain excess grease and juice and add to crockpot and mix into veggies and spices

  • Add the 2 cups of water and mix around; you can substitute chicken broth for a little added flavor

Cooking


Cook Time: 4-10 Hours


Ingredients: 2 cans kidney beans


  • Let crockpot do it's magic for the next few hours!

  • About 2 hours prior to eating, open the cans of kidney and drain/rinse

  • Add drained and rinsed kidney beans to the crockpot and let cook with the rest of the chili mix for 2 hours

Prep Time: About 5 Minutes


Ingredients: Sour cream, 1 red onion, Serrano pepper, and shredded cheddar cheese


  • Before placing cooked chili into bowls, peel and dice the other red onion and cut the serrano pepper into wheels for toppings

  • As you scoop chili into bowls, sprinkle with cheddar cheese and add a dollop of sour cream.

  • Garnish with raw onion and Serrano pepper

* Serrano peppers can be very hot! Feel free to omit, choose a milder pepper, or go with a hotter one if you prefer!

  4. Open can of diced tomatoes and add tomatoes and juice to crockpot

  5. Add rest of dry spices to the crockpot

  6. Once turkey meat is browned and has an internal temperature of at least 165-degrees Fahrenheit, drain excess grease and juice and add to crockpot

  7. Add the 2 cups of water and mix all in well together

  8. Cook 4-10 hours; or your desired cook time

  9. 2 hours prior to eating, drain and rinse the canned kidney beans and add to crockpot

  10. Peel and dice the other red onion and cut the serrano pepper into wheels for toppings

  11. Sprinkle chili with cheddar cheese and add a dollop of sour cream and garnish with raw onion and Serrano pepper
